For many, Bacalhau à Lagareiro is a Portuguese recipe that originated in the north with the people who worked with olives. However, there are doubts about that. What we do know for sure is that it is one of the most popular ways to cook our most popular fish! The most appropriate parts of the cod to prepare this dish are the lombos (fillets).

Lombos are usually the juiciest part of the codfish and flake the most easily. They are ideal for roasting, baking, grilling, and preparing typical dishes such as Bacalhau à Lagareiro. Unsure how to pre-prepare cod?

- 800g de lombo de bacalhau demolhado (800g soaked cod fillet)
- 1 folha de louro (1 bay leaf)
- 600g batatas (600g potatoes)
- 3 dentes de alho (3 cloves garlic)
- 2dl de azeite (2dl olive oil)
- Sal grosso (a gosto) (Coarse salt (to taste) )
- Legumes para decorar – opcional (pimentos, salsa fresca, etc) (Vegetables for garnish – optional (peppers, fresh parsley, etc)

1 – Coloque as postas de bacalhau previamente demolhadas num tabuleiro de forno. (Place the previously soaked codfish slices in an oven tray.)
2 – Junte os dentes de alho picados, a folha de louro e regue com azeite. (Add the chopped garlic cloves, bay leaf and drizzle with olive oil.)
3 – Lave bem as batatas com pele e disponha num segundo tabuleiro. Salpique com sal grosso. (Wash the potatoes in their skins and place them in a second tray. Sprinkle with coarse salt.)
4 – Leve os tabuleiros ao forno a 200 °C durante cerca de 40 minutos. (Place the trays in the oven at 200°C for about 40 minutes)
5 – Vá regando o bacalhau com o azeite do assado. (Drizzle the codfish with the roasting oil.)
6 – Quando as batatas estiverem assadas, esmague-as ligeiramente com a ajuda de um pano até a pele estalar. ( When the potatoes are baked, crush them lightly with the help of a cloth until the skin pops off.)
7 – Coloque as batatas na travessa do bacalhau, cubra com o azeite do assado e sirva. (Place the potatoes in the cod dish, cover with the roast olive oil and serve.)
