Arroz Doce

Arroz Doce is a traditional Portuguese dessert that translates to “sweet rice” in English. It is a creamy rice pudding made with rice, milk, and sugar, and often flavoured with cinnamon and lemon zest. This dessert is a classic and beloved part of Portuguese cuisine, frequently served during festive occasions and family gatherings, especially around Christmas and other holidays.


  • 1L de leite meio-gordo (1L half-fat milk)
  • 200 g açúcar em pó (200g powdered sugar)
  • 200 g arroz carolino (200 g carolino rice)
  • 1 c. de café de sal (1 coffee spoon of salt – 3ml)
  • 1 casca de limão (1 lemon peel)
  • 3 gemas de ovo tamanho M (three egg yolks size M)
  • canela em pó q.b. (powdered cinnamon to taste)

1 – Levar ao lume um tacho com o leite, o açúcar, o arroz e o sal e quando levantar fervura juntar a casca de limão. (Bring a pan of milk, sugar, rice and salt to the boil and add the lemon zest.)

2 – Deixar cozer em lume brando, mexendo de vez em quando, até o arroz estar bem cozido mas ainda caldoso. (Leave to simmer, stirring occasionally, until the rice is well cooked but still syrupy.)

3 – Desfazer as gemas com um garfo numa tigela, juntar um pouco do arroz cozido, mexa e misturar tudo no tacho. (Mash the egg yolks with a fork in a bowl, add a little of the cooked rice, stir and mix everything together in the pan.)

4 – Levar novamente ao lume, agora muito baixo, e mexer cerca de um minuto. (Bring back to the boil, now on a very low heat, and stir for about a minute.)

5 – Retirar do lume e distribuir por taças individuais ou numa travessa funda. (Remove from the heat and distribute into individual bowls or a deep dish.)

6 – Depois de frio, polvilhar com canela. (Once cold, sprinkle with cinnamon.)
