Cozido à Portuguesa🐷🥬🥕

Cozido à portuguesa, a quintessentially Portuguese dish, bursts with intense flavours, combining various meats and vegetables. It’s typically accompanied by plain rice. This dish is traditionally eaten for Carnaval (Fat Tuesday).


Ingredientes – 4 Pessoas | Ingredients – 4 People

  • 200 g carne de vaca para cozer (200 g stewing beef)
  • 200 g pá de porco (200 g pork shoulder)
  • 300 g carne de galinha (300 g hen)
  • 1 morcela (1 black pudding)
  • 150 g toucinho fumado (150 g smoked pork belly)
  • 1 chouriço de carne (1 chouriço)
  • 400 g couve-lombarda (400 g savoy cabbage)
  • 1 alho-francês (1 leek)
  • 4 batatas (4 potatoes)
  • 2 nabos (2 turnips)
  • 4 cenouras (4 carrots)
  • 3 dentes de alho (3 garlic cloves)

Preparação | Preparation

1 – Lave bem as carnes e coloque-as numa panela de pressão. Coza durante 25 minutos. Depois de cozidas, reserve as carnes e o caldo. (Wash the meat well and put it in a pressure cooker. Cook for 25 minutes. Once cooked, set the meat and stock aside.)

2 – Lave a couve e o alho-francês corte-os aos pedaços. Lave, descasque e corte as batatas, os nabos, as cenouras e os alhos ao meio. De seguida coloque-os numa panela. (Wash the cabbage and leeks and chop them up. Wash, peel and cut the potatoes, turnips, carrots and garlic in half. Then put them in a saucepan.)

3 – Junte as carnes previamente cozidas e cubra até metade com água. A outra metade, com o caldo da cozedura das carnes. (Add the previously cooked meat and cover half of it with water. The other half with the stock from cooking the meat.)

4 – Cozinhe tapado durante 15 minutos, ou até os legumes ficarem cozidos. (Cook covered for 15 minutes, or until the vegetables are cooked.)

5 – Retire as carnes e corte-as aos pedaços. (Remove the meat and cut it into pieces.)

6 – Coloque as carnes e os legumes numa travessa larga e sirva. (Place the meat and vegetables on a large platter and serve.)

7 – Sugerimos que acompanhe com arroz branco cozinhado na restante água de cozedura das carnes. (We suggest serving with white rice cooked in the remaining cooking water.)
